1. 负责酒店风味餐厅品类的菜品研发、工艺标准化、出品质量管控及口味一致性保障;
2. 统筹厨房日常运营,包括人员排班、食材验收与库存管理、成本控制及设备维护;
3. 指导并培训岗位厨师,落实食品安全操作规范、明火作业安全规程及卫生管理制度;
4. 配合酒店餐饮推广需求,参与主题菜单设计、现场烹饪展示及顾客体验优化;
5. 严格执行《食品安全法》《餐饮服务食品安全操作规范》及酒店内部食品安全管理要求。
1. 具备3年以上高星级酒店或精品餐饮机构负责人工作经验;
2. 持有有效《健康证》及国家认可的中式烹调师(四级/中级)或西式烹调师(四级/中级)及以上职业资格证书;
3. 熟悉食品过敏原标识、交叉污染防控及明火操作安全规范,具备食品安全风险识别与应对能力;
4. 具备良好的沟通协调能力与团队管理意识,能适应酒店餐饮弹性工作安排;
5. 无传染病病原携带者限制情形,符合国家对接触直接入口食品从业人员的健康要求。
