Overview

Based at the Emirates Palace Mandarin Oriental Abu Dhabi within the Culinary Department, the Chef de Cuisine leads, manages, and organizes all aspects of food production to the highest professional standards and in accordance with Standard Operating Procedure issued by the Executive Chef. The role involves running the kitchen outlet with creativity and innovation by introducing new dishes and products to the market.

Responsibilities

  • Assist in the management of kitchen operations, including menu planning and costing.
  • Organize special events and develop new dishes.
  • Maintain food quality standards and comprehensive product knowledge.
  • Schedule working hours of all kitchen staff, taking into consideration expected business volume.
  • Arrange additional staff during high-volume periods or dismiss them earlier when business slows.
