Adesso Bakeshop is a growing Brooklyn bakery making sourdough cookies, Italian amaretti, mochi brownies, and seasonal baked goods.

We are looking for an experienced Cookie Production Lead / Bakery Sous Chef to work directly with our head baker as second in command and help run weekly production.

This is a hands-on production role, not a casual kitchen job. We are looking for someone fast, precise, organized, calm under pressure, and able to take ownership of production flow.

Prep Day / Production Setup

• Prepare dry mixes for sourdough cookie production
• Prepare amaretti dry mixes and sift almond flour as needed
• Set up ingredients, trays, labels, tools, and production stations
• Help maintain an efficient flow for dough mixing and prep
• Direct Bakers and Baking Assistants on assigned tasks
• Help make sure eggs, chocolate, ingredients, dry mixe...
